I wouldn't put either of the Ice Age movies in my top 5, though they're pretty funny (especially the first one). Incredibles was excellent, but I think easily Ratatouille beats out some of the others, it would be in my top 3. Someone else mentioned Miyazaki's work, which I'd strongly recommend you check into -- Princess Mononoke would probably be the flagship movie of his, though his works are so numerous (and so spread out over the last ~20 years) it's hard to pin it down to just one to use on a top-5 list. Ice Age 2, really? I wouldn’t put either of the Ice Age movies in my top 5, though they’re pretty funny (especially the first one).
